how to cook tajine fish
Ingredients
- 750 g of white fish (cod, wolf, monkfish ...)
- 2 large tomatoes
- 2 green peppers
- 3 medium potatoes
- 4 carrots
- 1 large lemon
- 4 garlic cloves
- 1 large bunch of coriander
- 1 glass of green olive
- 1 C. tablespoons of cumin
- 1 C. tablespoons paprika
- 1 C. pepper coffee
- ½ glass of olive oil
- 1 pinch of salt
Preparation
step 1
- In a salad bowl, prepare the chermoula (fish marinade): mix the olive oil, the chopped coriander, the cumin, the paprika, the pepper, the chopped garlic, the diced tomatoes, a lemon and salt. Add the fish fillets cut into pieces. Mix with hands, long enough so that the fish is well impregnated with the mixture

- Peel the carrots. Cut them into sticks. Peel potatoes and cut into pieces. Grill the peppers on the gas flame (or in the oven), remove the skin by scratching it under tap water and cut into large strips.

- Arrange the carrot sticks in the bottom of the tajine dish and put the fish on top. Add a glass of water. Cover with potatoes, peppers, olives and lemon pieces. Close the tagine dish and cook for about 40 minutes on very low heat. It is essential to use a heat diffuser between the gas flame and the tajine plate

- Serve the hot fish tagine.
